Quick Chicken “Alfredo”

This is also delicious with cooked broccoli mixed in.

3 boneless, skinless chicken breasts, uncooked, cut into 1/4″ cubes
2 cloves fresh garlic, crushed
3 cups 1% milk
2 TBSP corn starch
1/2 tsp salt
dash or 2 pepper
3/4 cup Parmesan cheese

8oz cooked linguine or spaghetti noodles, preferably whole wheat

In medium skillet, cook chicken cubes until cooked through. Remove from pan. Spray pan with cooking spray. Cook garlic for 30 seconds. Add 2 1/2 cups milk to pan, stirring constantly. Whisk together 1/2 cup milk and cornstarch. When milk in pan is simmering, whisk in cornstarch mixture, salt and pepper. Stir constantly and boil for 2 minutes. Turn down heat and add Parmesan and chicken until heated through. Serve over cooked spaghetti noodles.

    Sounds delicious, DK, but isn’t the calorie count, sodium and carbs a bit high? Can you suggest any way to lower these? I love the ldea of adding broccoli to it for a one dish dinner.

      When you consider that a similar meal at a restaurant has about 1500 calories, 98g fat and 115g carbs you can see how much lighter this recipe is! Less than 500 calories for a complete meal is going to be okay for most people. This recipe is made with 1% milk and has no added butter or oil so most of the fat comes from the Parmesan. You could cut back on the Parmesan, which would also lower the sodium. You could also have a smaller portion size. Remember, it is not what you eat at a single meal that is important, but how things add up over a period of days. I’m so glad you enjoyed the recipe!
