Roasted Purple Cauliflower

1 head purple (or other color) cauliflower
2 tablespoons olive oil
1/4 tsp sea salt

Preheat oven to 450. Cut cauliflower into florets, about 1-2 inches big. Toss cauliflower florets, olive oil and salt together. Spread in 1 layer in shallow roasting pan. Roast at 450 for 20 to 25 minutes, stirring occasionally.
